CHICKEN CUTLET WITH SUMMER SUCCOTASH
INGREDIENTS
- 4 slices of thin chicken cutlets
- Salt
- Pepper
- 1 tablespoon of olive oil
- 1 cup of frozen baby lima beans, thawed
- ½ cup of corn
- 1 pint of grape tomatoes
- ½ cup of fresh basil leaves
- 1 tablespoon of Grated Parmesan
- 2 lemons
- 2 100-calorie whole wheat roll (optional)
INSTRUCTION
- Place a grill pan over high heat
- Season 4 thin chicken cutlets, each with ¼ teaspoon of salt and pepper
- Grill for 3-4 minutes, turning once
- At the same time, heat 1 tablespoon of olive oil in a large skillet over medium-high
- Add in 1 cup of frozen baby lima beans, ½ cup of corn and 1 pint of grape tomatoes
- Cook them in a tossing manner for about 3-4 minutes (until the tomatoes burst)
- Tear the basil leaves
- Add in 1 tablespoon of grated Parmesan and 1/2 cup of torn basil leaves
- Pair each portion with lemon wedges
- Serve 2 chicken cutlets in a plate with summer succotash
