CHICKEN CUTLET WITH SUMMER SUCCOTASH

INGREDIENTS

  • 4 slices of thin chicken cutlets
  • Salt
  • Pepper
  • 1 tablespoon of olive oil
  • 1 cup of frozen baby lima beans, thawed
  • ½ cup of corn
  • 1 pint of grape tomatoes
  • ½ cup of fresh basil leaves
  • 1 tablespoon of Grated Parmesan
  • 2 lemons
  • 2 100-calorie whole wheat roll (optional)

INSTRUCTION

  1. Place a grill pan over high heat
  2. Season 4 thin chicken cutlets, each with ¼ teaspoon of salt and pepper
  3. Grill for 3-4 minutes, turning once
  4. At the same time, heat 1 tablespoon of olive oil in a large skillet over medium-high
