Low calorie recipe: No-Bread Tomato Bun
These Tomato Bun ‘sandwiches’ are so good, you won’t even miss the bread.
Prep Time: 15 Minutes
Cook Time: 20 Minutes
Servings: 4
Ingredients
- 12 slices turkey bacon, halved
- Freshly ground black pepper
- 4 tomatoes
- 2 pieces romaine lettuce, torn into smaller pieces
- 1 avocado, sliced
- 2 tablespoon mayonaise
Directions
Step 1
Preheat oven to 204°C.
Step 2
Make a turkey bacon weave: On a baking sheet, line 3 turkey bacon halves side-by-side on the pan. Lift one end of the middle turkey bacon slice and place a fourth turkey bacon half on top of the side pieces and underneath the middle slice. Lay the middle slice back down. Next, lift the two side strips of turkey bacon and place a 5th turkey bacon half on top of the middle piece and underneath the sides. Lay the side slices back down. Finally, lift the other end of the middle slice and place a 6th slice on top of the side pieces and underneath the middle slice. Repeat the weaving process 4 times. Season turkey bacon weaves with pepper.
Step 3
Place an oven-safe cooling rack on top of the turkey bacon to prevent curling and bake until bacon is crispy, about 20 minutes. Transfer turkey bacon weaves to a paper towel-lined plate.
Step 4
Slice tomatoes and reserve inside tomato slices for another use.
Step 5
To make the sandwiches, top the bottom slice of a tomato with romaine, then add a bacon weave and avocado. Slather top tomato slice with mayo and add to sandwich.
