Recipes for Eye Health: Carrots

Why Carrots Are Good For Your Eyes?

The carrot has long been thought of as beneficial to your eye health. The truth is that multiple foods are just as important in the nutrients that supply for eye health. Carrots are high in Vitamin A which is an essential nutrient for quality vision. The orange colour in carrots is caused by beta-carotene which is a form of Vitamin A that assists the retina, as well as other areas of the eye function well. If you are deficient in Vitamin A you may find it more difficult to see in dim light and it may cause some forms of night blindness. Vitamin A is also very important in promoting a health ocular surface and thus helping prevent dry eyes.

Carrots also have good amounts of Vitamin C which is important for eyes and may reduce the risk of cataracts and macular degeneration. Vitamin C is important in helping the body form and maintain connective tissue and collagen, and in maintaining healthy blood vessels including the delicate capillaries present in the retina.
