Diabetic Friendly: Korean-Inspired Turkey Lettuce Wrap

These simple wraps comes together in less than 30 min, and it’s incredibly hearty, healthy and filling!

Servings: 4

  • 450 grams ground turkey (You can alternatively use ground chicken or beef)
  • 1 green bell pepper
  • 1 red onion
  • 1/2 cup zucchini
  • 2 tsp. extra virgin olive oil
  • 1 tsp. sea salt
  • 1/2 tbs. black pepper
  • 1/8 tsp. fresh ginger
  • 1/2 tsp. curry powder
  • 1/2 tsp. garlic
  • 2 tbs. light soy sauce
  • 8 romaine lettuce

Combine ground turkey, chopped green pepper, diced red onion, chopped zucchini, and olive oil in a large skillet over medium high heat. Cook and break apart turkey until browned.

Step 2

Add sea salt, black pepper, ginger, curry powder, minced garlic, and tamari; mix well.

Step 3

Continue cooking until vegetables are all tender and turkey is cooked through.

Step 4

Place a large spoonful of cooked turkey mixture on each lettuce leaf.

Step 5

Wrap the lettuce around the mixture and hold it in place with a toothpick.
