Why Carrots Are Good For Your Eyes?

The carrot has long been thought of as beneficial to your eye health. The truth is that multiple foods are just as important in the nutrients that supply for eye health. Carrots are high in Vitamin A which is an essential nutrient for quality vision. The orange colour in carrots is caused by beta-carotene which is a form of Vitamin A that assists the retina, as well as other areas of the eye function well. Ingredients:

  • 3 carrots, steamed
  • 2 beetroot, steamed or soft
  • 1 handful coriander
  • 1/2 clove garlic
  • 1 Tablespoon olive oil
  • 2 Tablespoons Greek Natural Yoghurt
  • Added spices: hot paprika, black pepper, turmeric, cumin
  • Pink rock salt

  1. Put all in a food processor. You can leave it slightly chunky if you like.
